Somewhere around forty minutes before the sun reaches the water, the terrace begins to fill. It is not an event and nothing is announced; guests simply come up, because the light is doing something and everyone can feel it.
Our list is short by design. A fig and thyme sour. A citrus and raki highball, long and cold. Aegean wines from Şirince and Bozcaada by the glass, served slightly cooler than convention allows because the evening is warm.
Nothing is announced. The light simply starts doing something.
Small plates follow the same logic as the kitchen — olives cured in-house, grilled almonds, a little sea bass tartare when the morning has been kind.
Stay past the sunset. The twenty minutes after the sun disappears are the ones photographers call the blue hour, and the bay does something with that colour that is difficult to describe and easy to remember.
